Almond, a popular tree nut, can cause IgE-mediated allergic reactions. Almond flour from various vendors are often contaminated with high levels of microbes. Irradiation is a method that can decrease bioburden, however, irradiated almond flour used in oral immunotherapy (OIT) trials has not been characterized. We aimed to quantify relative amounts of the major almond allergen (Pru du 6) and bioburden levels present in irradiated almond flour used in OIT trials and assess whether these parameters are stable.
